Salt-baked sea bass : a simple recipe for a sensational flavor

Salt-baked sea bass is one of the star dishes of Mediterranean cuisine. This simple recipe usually accompanies diners during large celebrations, although it is a very common fish in our waters, known for its nutritional qualities and delicate flavor.

Sea bass belongs to the long list of white fish, among which are cod, sea bream, John Dory, hake, monkfish, sole or turbot, among others. It has no carbohydrates, fiber or sugars, and is high in iron and calcium.

There are numerous ways to cook sea bass, as it is a fish that offers all kinds of possibilities. Tartare, carpaccio, baked or grilled are some of the best known. However, salt-baked sea bass is probably the recipe that most enhances the mild flavor and healthy properties of this excellent fish.

Preparation of salt-baked sea bass

In Spain, the technique of wrapping fish in salt is a tradition inherited from the people of the sea. A system that, when the fish is fresh, makes the meat juicier and full of flavor. The ingredients could not be simpler: fresh sea bass and coarse sea salt.

When coating the sea bass it is recommended to use twice as much coarse salt as the weight of the fish. It is also important to moisten the salt a little and leave the eye uncovered to see if it is cooked to perfection. The cooking time is approximately 20 minutes in the oven at 200 degrees, depending on the size of the fish. Once cooked, it should rest for about 5 minutes so that the layer of salt hardens, can be easily removed and is clean of salt.

Finally, the salt-baked sea bass can be served with boiled or baked potatoes, mayonnaise or aioli and a good seasonal salad.

In the restaurant Can Pep they have been cooking this typically Mediterranean recipe for over 60 years that leaves no one indifferent. If you are a lover of fresh fish, we recommend you to visit the restaurant Can Pep in Port d’Andratx to enjoy an extraordinary salt-baked sea bass.

Like every year, on July 16 the festivity of the Virgen del Carmen is celebrated. An event in Port d’Andratx, which dresses up for this date, as it is the patron saint of the sea and the fishermen of this coastal town of Mallorca.

This seafaring procession is one of the most awaited events of the year in the municipality and attracts numerous devotees and tourists from all over Spain and the rest of the world.
The celebration begins with a solemn mass, and then, the Virgen del Carme is carried to the pier after passing through different streets of the port and finally being embarked to sail the waters of the bay of Andratx.

The boats that accompany their patron saint are decorated with flowers for the occasion. When the sun sets, these are illuminated, giving a great visual spectacle to the delight of all those gathered.

In addition to the traditional mass and the seafaring procession, a multitude of activities also take place throughout the weekend such as open-air dances, open-air dinners, popular dances and the equestrian show known as the Nit del Cavall (Horse Night).

One of the best places to experience this magical day in Port d’Andratx is from the terrace of the restaurant Can Pep. Not only you can contemplate a wonderful view of the bay of Port d’Andratx on the seafront, but they also offer the best fish, seafood and meat around the area.

Iberian ham, a Spanish product that transcends our borders

The history of Iberian ham is steeped in mystery and romanticism. Spain’s ancient pastures of oaks, holm oaks and cork oaks, the noble black Iberian pig, the mountain air that caresses each ham as it is magically transformed into one of the world’s most exquisite foods, all play a part in this uniquely Spanish phenomenon. Without each ingredient, the recipe is altered. Greatness can only be achieved with patience, skill and adherence to traditional methods.

The Iberian black pig lives primarily in the central and southwestern region of the Iberian Peninsula, which includes both Portugal and Spain. In Spain, the Iberian black pig is usually found in the provinces of Huelva, Córdoba, Cáceres, Badajoz, Salamanca, Ciudad Real and Seville.

Iberian ham, as appreciated in Spain as in the rest of the world, is one of the delicacies that everyone who tastes it is intoxicated by its extraordinary flavor. Its dark red meat is served in thin slices at an optimal temperature so that the diner can taste its exquisite nutty flavor, not too salty and with the sweet sensation of how it melts in the mouth.

Fresh seasonal products

In the restaurant Can Pep in Port d’Andratx you can taste this traditional dish in its wonderful terrace a few meters from the sea. In addition to the Iberian ham, Can Pep serves sensational dishes based on fresh seasonal products. Fish, seafood, meats or delicious homemade desserts are just some of the foods found in its varied menu. And, of course, in the restaurant Can Pep you can enjoy the best Spanish and international wines, in an incomparable setting of the bay of Port d’Andratx.

The red shrimp of Port d’Andratx: a true delight

The first time you tasted a Mallorcan red shrimp from Port d’Andratx, it is quite likely that from your first delicate bite, you had the feeling that it was the best shrimp you had ever tasted in your life. You are not the only one! In their time, the Romans already praised these Mallorcan red prawns.

This succulent delicacy provided by the Mediterranean Sea is one of the hallmarks of our gastronomy. Port d’Andratx, together with Port de Sóller, are the two most renowned ports of Mallorca where these coveted crustaceans are found throughout the year, but especially in the months of high season, when there is more demand.

Of an intense red color and a very soft inner texture, the red shrimp usually arrives at the Port d’Andratx fish market in various sizes: small, medium, large and extra. If you go to the port’s wharf you will see how the fishing boats arrive every day, from Monday to Friday, at approximately 5pm. It is worth seeing.

There are many ways of cooking red prawns: prawn carpaccio, prawn cocktail, baked fish with prawns, etc. But, undoubtedly, the most popular in the kitchens of homes and restaurants in Mallorca is still grilled, basically over and over, with a drizzle of extra virgin olive oil and coarse sea salt.

A dish of red prawns from Port d’Andratx at the restaurant Can Pep is always a good choice.

If you still have not had the pleasure of tasting the red shrimp of Port d’Andratx, we invite you to visit our restaurant Can Pep to enjoy one of the most extraordinary gastronomic delights that the Mediterranean Sea has to offer.

In addition to the succulent Mallorcan prawns, in our restaurant you will find an extensive menu that stands out for the fresh seasonal product, such as seafood and fish of the day, a wide assortment of rice and pasta dishes or our stone-grilled meats. Check our menu here.
